This is one of my favorite cookie recipes to make! Just though I would share 🙂 Enjoy!
Oatmeal Raisin Soft Cookie Recipe
Ingredients
1 cup canola oil
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
1 teaspoon salt
1 teaspoon baking soda
1 1/2 teaspoons ground cinnamon
2 cups all-purpose flour
1 cup raisins
3 cups quick cooking oats
Directions
In a mixer cream together oil, white sugar, brown sugar, and eggs. Then add extract, salt, baking soda, and cinnamon. Let mix for about 4 minutes. Then, add one cup of flour at a time giving it plenty of time to blend well. Add raisins and oats, mix well. Cover, and chill for at least one hour.
Preheat over to 375 degrees F. Grease cookie sheet or use foil. Roll the dough into balls {around a tablespoon each}, place 2 inches apart on cookie sheet. Use a fork dipped in sugar to flatten each cookie crisscross each cookie.
Bake 10 to 15 minutes. Allow cookies to cool for five minutes before transferring to a wire rack.

I Too Love Soft style oatmeal and raisin cookies.. I make them a couple of times a Year.. My Mom always made them when I was growing up. I will try your recipe the next time I bake cookies. They look Delicious~ Thankyou for the recipe..

Oh thank you for a recipe to use my canola oil. It doesn’t last forever and I know oatmeal cookies will be a hit. I like mine crispy so I don’t have a soft cookie recipe like this one.

This is just about identical to the recipe I use for oatmeal raisin cookies! The main difference is that mine uses butter, but the oil probably is what makes the cookies extra-soft.

I love oatmeal cookies. I would add butterscotch chips in too. For me, cookies must be soft. I can’t eat a crunchy cookie. I usually under cook them a bit so they’ll soft.
